This is something that is difficult to translate into a natural English phrase.
There are many ways to express this feeling.
• I am way too stressed!
• I can't take the stress anymore!
• I am way too overworked!
And the list goes on, but in my experience, those would be the most common ways of expressing high levels of stress.

But I feel like ストレスめっちゃたまってる would be I’m way too stressed.
ストレスが爆発する is like you were holding the stress all the time and never vent, and finally you couldn’t take it anymore..? So the phrase you told me “ I can’t take the stress anymore” would be the closest. What do you think?

@TMNT If that's the feeling it expresses, then I would definitely agree. Being unable to vent and the emotions coming out all at once would be best expressed by "I can't take the stress anymore" because it is basically saying you are fed up with the situation and you are tired of being so stressed and overworked to the breaking point. So yes, I think you are correct!
