Using "that" instead of "the one" would be, in fact, grammatically wrong. "The one" is correct.

No, it will be grammatically incorrect and sound unnatural. 'This book is more interesting than the one he wrote' is fine as it is.
You can add 'that', but instead you use it like this:
"This book is more interesting than the one that he wrote."
