I find myself having difficulty using this adjective with its preposition.
I'd like to verify whether I've got it right or not.
Feel free to correct my sentences and write anything that is related to this.
Examples,
I've been interested in learning English for two years. [Easy one]
Do you like watching TV? Are you ever interested in (it?)?[Do I have to put "it-watching TV" after in so that a person knows what I refer to by saying interested in?]
Basically, I'm not sure whether I have to put pronouns after the preposition IN, or can I omit them?

First sentence is great. And yes, you must put pronouns after the preposition in this case.
The three main uses of this expression I can think of are:
1) Expressing a hobby or something a person likes– 'she is interested in music' = 'she likes music'
2) Expressing something someone wants to do– 'I am interested in learning more about Chinese culture' = 'I want to learn more about Chinese culture'
3) Using "not interested in" to demonstrate a lack of concern– 'The government are not interested in what the public has to say' = 'The government do not care what the public has to say'
Hope that clarifies everything, although based on your first sentence I'd say you probably already have a good grasp of it.
