1. The economics of nuclear power (have) become more and more difficult in the last decade.
2. All of the scientific evidence (points) to the conclusion that increasing use of pesticides in farming is damaging our health.
Why in sentence 1 the verb “have” is plural and in sentence 2 the verb “point” is singular?

If you were talking about economics (without 'the') as an entire field of study it would be singular. e.g. Economics is a difficult subject. But because it is specific to a particular branch of economics i.e. nuclear energy, we say the economics of....(+plural)
